Here is a list of resources that I have used and/or currently using in writing and learning about these topics. Some resources may be skewed towards pilots but there are still great resources.

20XX Federal Aviation Regulations For Flight Crew

Reference point of all the important regulations that a Part 121 or Part 135 dispatcher and pilot will need.

FAR/AIM 20XX: Federal Aviation Regulations/Aeronautical Information Manual

The AIM is useful in finding relevant pilot regulations and topics such as weather charts, airspaces, ATC rules, etc.

FAA Aviation Weather Handbook

Free handbook provided by the FAA that explains weather theory and charts and how it all relates to aviation.

Aviation 101 With Laura

Laura is a professor at LeTourneau University that explains weather theory, weather charts, navigation charts, and anything dispatch related. Her videos is extremely helpful in preparing for airline interviews.

Flight Insight

Flight Insight is more geared towards pilots but his IFR videos relating to IAPs, weather minimums, and navigation charts is one of the best. Useful for Jeppesen Charts reviews.

Pilot Institute - New Guy Podcast

Pilot Institute has a podcast style series where they basically do an "oral check-ride" for each important topic an dispatcher or pilot will learn. The editing and visuals are top notch and you can learn a lot from just listening each episode.
